Reply:Isn't 'suet' lard? People can still buy lard and cook with it, even though it isn't the healthiest ingredient one time isn't going to kill you.
Reply:Use vegetable shortening. I do all the time.



Don't use bacon fat. It will taste like it.
Reply:Bacon fat.....or in a pinch, use butter flavored Crisco.....
Reply:NPR just did a segment on Christmas pud that called for butter instead of suet. Lard definitely won't do. I think you can find the recipe on their website
Reply:Suet (beef fat) can be found in some stores, you can ask the butcher in your local store if he can give or sell you some. Now-a-days they sell it as something to feed birds. Lard may make a good subsititute, but suet is beef fat where as lard is pork fat. Since it is from different animals, using lard may change the flavor a bit.
