How to make a tasty plum cake and soft bread?

German Plum Cake



1/4 lb butter

1/3 cup sugar

1/2 teaspoon vanilla

1 egg

1 tablespoon sour cream

1 pinch salt (only if you use unsalted butter)

1 teaspoon lemons, rind of

1 3/4 cups flour

1 teaspoon baking powder

2 cups plums, pitted and sliced into thin wedges



For the topping

6 tablespoons butter

3/4 cup flour

1/3 cup sugar

1/2 teaspoon cinnamon



1.In a large bowl, cream the butter, add the sugar, vanilla, egg, lemon peel, sour cream and salt (if desired).

2.Mix the flour and baking powder and add that into the mixture.

3.Grease the base of a round baking pan and spread the dough over the pan.

4.Liberally spread plums over the dough.

5.To make the optional topping, cream the butter, add flour, sugar and cinnamon.

6.Sprinkle over the plums and bake for 30-45 minutes in the middle rack at 375 F.

7.Be careful not to let the bottom burn!

8.Serve with lots of freshly-made whipped cream.

9.If you like, you may also sprinkle rum or cinnamon over the fruit before baking.



Happy Endings Plum Cake

Ingredients

1 c Butter, sweet

1/4 c Sugar

3/4 c Sugar, brown, dark

2 lg egg

1 ts Vanilla extract

2 1/2 c Flour

2 ts Baking powder

1 ts Baking soda

1/2 ts Salt

2 ts Cinnamon, ground

16 oz Purple plums, canned

Sugar, confectioners



Preparation

Drain plums well, reserve syrup and chop plums.





Preheat the oven to 400 F. In a large mixing bowl, beat the butter



until creamy and light, then gradually add the sugars, beating until



creamy and smooth. Beat in the eggs, then the vanilla. Sift all dry



ingredients together; stir into the butter mixture, alternating with



1/2 cup of the reserved syrup, beginning and ending with dry



ingredients. Stir in the plums. Pour the batter into a greased 9" x



13" baking pan. Bake for 25 to 30 minutes, or until a toothpick



tests clean. Turn the cake out of the pan and cool on a wire rack.



Dust with confectioners' sugar.





BERBER SOFT BREAD

3 1/2 cups all purpose flour

1 1/4 teaspoons salt

1 cup hot water

7 tablespoons vegetable oil

Honey



Mix flour and salt in processor. Add 1 cup hot water and 4 tablespoons oil; blend until ball forms. Remove dough from processor. Using oiled hands, divide dough into 3 equal pieces. Roll each piece on lightly floured surface into 9-inch round about 1/4 inch thick. Heat 1 tablespoon oil in medium (10-inch-diameter) nonstick skillet over medium heat. Add 1 dough round to skillet; reduce heat to medium-low and cook until golden on bottom, about 5 minutes. Turn bread over; cook until golden on bottom and bread is cooked through, about 5 minutes. Transfer bread to plate. Tent with foil to keep warm. Repeat with remaining oil and dough. Break warm bread into pieces, drizzle with honey, and serve.



Makes three 9-inch rounds.
