Is hoisin sauce the same thing as plum sauce?

No. Plum sauce, a staple dip at Chinese restaurants. Store-bought plum sauce is made with vinegar, sugar, and other seasonings. The result is a sweet, jam-like sauce with a tart flavor that goes very well with egg rolls, spareribs, and roast pork.



Hoisin sauce, also called Chinese barbeque sauce is a fragrant, pungent sauce used frequently in Asian stir-fries and marinades. Made from a combination of fermented soy, garlic, vinegar, and usually chilis and sweetener, hoisin is dark in color and thick in consistency. It has a very strong salty and slightly sweet flavor, which some may find objectionable.

Because the flavor can be overpowering, particularly if you’re new to Asian cuisine, it’s recommended that you use only a bit at a time to experiment with the flavor. Or, dilute the flavor by adding water or oil to the paste before using in a recipe.

Reply:the hoisin sauce as far as i know is also known as a plum sauce OR it tastes very similar to what is commonly know as a plum sauce. i've wondered this thing for years. if you have a recipe that calls for plum sauce you should be ok to use the hoisin. i think hoisin is easier to buy under that label. i haven't seen plum marketed as much as the hoisin which leads me to believe they are in fact the same thing.
Reply:My favorite brand of Hoisin Sauce contains sugar, water, soybeans, salt, sweet potato, modified corn starch, sesame seeds, garlic, wheat flour, chili pepper, spices, caramel color, acetic acid, red food dye and potassium sorbate for preservative. No sign of plum in that.

It's a common error among the uninformed and westerners that Hoisin and Plum Sauces are the same thing. Plum Sauce, though, is the sweet-and-sour, more transluscent concoction served over duck -- not at all like its thicker, darker cousin.
