I found a cool link with LOTS of pannier manufacturers....you might contact some of them to see if they have them or will make them. My best suggestion would be to call Jandd and see if they'd be able and willing to get fabric in your color. Good luck!

Timbuk2 makes custom bags in all sorts of colors, but I don't believe they have a pannier design. Might be worth a phone call to them, though.
Where can I get pink (or better still plum) cycle panniers?
I suppose they must be around, even though I have never seen them.
If you do not find any, a good paint job is a easy solution.
Reply:It is long time ago when my grandfather made plum brandy . It was nice dry fall , frosty was just morning and I was pink from fresh mountain air about 12 or 13 years old . He give me some plum brandy about 15 litres for my father to my panniers . I did try with my brother when nobody see it how it taste and I do still remember this plum color after on numerous places on my body . Still I remember that my bicycle paniers smell like a liquid plums ........
