When is the right time to pick Italian Plums?

Are the plums meant to be picked after the first frost? They are starting to get soft now and they are sweet, but not sweet enough! I still think they have a tinge of green to their taste. They are deep purple, and a few have fallen from the tree, but mainly due to wind.

When is the right time to pick Italian Plums?
They definitely get sweetest after a frost. We have a thicket of them and they look so ready right now,but we need that cold first or they're kind of bitter or something.

Reply:pick them immediatly or the next frost will kill them they will actually ripen off of the tree... once they are mostly purple they no longer need nurishment from the tree to ripen however a really good frost can stop them from ripening at all maybe keep the ones with a lot of green on the tree. keep them in the garage for a few days and they should perk right up... taking them off the tree actually helps them ripen quicker wich is why the ones on the ground look better.
